| I've been pretty bad at keeping this food blog. I've been to many fantastic restaurants but usually too hungry to remember to take photos. Sorry. Here's something I made last night, just in time to enjoy while watching the Emmy's (I am a TV nerd at heart, after all).I made your basic stuffed jumbo shell pasta. It's very simple. For the filling, I used ricotta cheese, fresh spinach, garlic, mozzarella & parmesan. You can always add shredded chicken, or whatever you want to the filling, but I like to add the meat to the sauce instead. Cook the shells first. Cook them al dente (still firm) because they are gonna cook more in the oven later. Put a good layer of tomato sauce in a baking dish. You can use any ole jarred one, or you can make your own (I'll post my recipe for homemade sauce another day). I added 1 pound of beef and sliced portobello mushrooms (which I sauteed in butter and garlic first). After filling your shells (use a plastic bag, cut a corner and pipe the shells, rather than spooning them - much easier), place them on top of the sauce. Top it off with the rest of the sauce, and even more mozzarella & parmesan. Be very generous with the topping cheese.Cover loosely with foil, pop it in the oven at 350 for about 45 min. You can take off the foil towards the end to brown up the topping cheese if you'd like.For my sides I put together my go-to simple spinach tomato salad that I wrote about in my very first entry. Then I tried my hand at zucchini fries, which came out very nicely.The zucchini fries are very easy as well. Slice up some zucchini. Toss them in olive oil to coat them. Then dip them in a mixture of panko breadcrumbs (you'll find them in the international aisle), grated parmesan cheese, salt, and pepper. Put them on a cookie sheet and bake in a very hot oven, like 450 degrees. Turn them as they brown and voila! You're done.It was all pretty yummy in my tummy.WHERE: my kitchen |
| One of my best friends, Nang, went to culinary school & a great cook/baker. In January, the month of my birth, she offered to make me a cake, whatever kind of cake I wanted. I chose cheesecake. Being a busy working mom, she didn't have time until recently, when she got a week off of work, and she was finally able to make my cake. And boy was it a good cake.WHERE: my kitchen! |

| I had strawberries for breakfast yesterday. I'm not a health food freak, but I do enjoy healthy foods and encourage eating well. (Of course, my next entry will probably be one on some fast food place...) Strawberries, or any berry fruit, are rich in healing antioxidants, as well as fiber, and other good minerals and vitamins. Strawberries, raspberries and blackberries contain ellagic acid, a plant compound that combats carcinogens. Stir some berries into your yogurt, cereal, or eat alone for some healthy and sweet yummy goodness. |

Midori is a Korean restaurant that also serves sushi. I've been a frequent customer for years, and my friends and I go so often the servers remember our "usuals." Here's a few photos of our feast tonight: banchan (small side dishes that traditionally come with Korean entrees), spicy squid, galbi (marinated ribs), hamachi kama (grilled yellowtail tuna), and for the sushi: island roll, spicy tuna roll, Midori roll, Alaska roll, and ikura (salmon roe)...one of my favorites! My cousin Sila introduced me to salmon roe years ago and I've been hooked ever since.

I've been wanting to start a food blog for a long time, but I wanted to wait until I got a nicer camera, or even a nicer phone with nicer camera, to take photos of the food. The title is funny. So I'm keeping it! (hehe.) I'm by no means a fancy food critic who knows everything about food or what it should taste like. I just know I like to talk about food. I might post just photos only. Who knows. Anyway, here's the first one: simple yummy spinach salad with tomatoes, lemon juice, ground pepper, and mozzarella cheese. Got snowed in today, this stuff was in the fridge.
